Aligot Recipe - The cheesiest potatoes you've ever seen!!
what's going on sauce makers my name isMark and welcome to sauce stache. today we're
making something fun, potatoesaligot. so have you seen the potatoes
that are on Instagram, it's the cheesypotato with a crazy long cheese pull?
that's a French mashed potatoessentially and that's what we're gonna
be making today. let me show you how it'sreally not that hard so this isn't the
classic way of making a pommes aligot this is just a simple way with easy to
find ingredient that you can find in anAmerican grocery store so we have two
pounds of Yukon Gold potatoes 1 pound ofGreer cheese half of a pound of
mozzarella fresh mozzarella not theshredded kind we have 3/4 cup of heavy
whipping cream we move up 4 ounces orone stick of unsalted butter and then
kosher salt and black pepper we're alsogoing to need some cold water and then
potato ricer if you have one so firstthings first let's get the potatoes
peeled chopped up and get them boiling
so we got a potatoes clean now let'schop them into some blocks so once we
have all the potatoes chopped up we'regoing to just salt some just a little
bit get this flame going and then coverwith cold water and we're gonna bring
them to a boil so while we're waitingfor this to boil let's go ahead and get
our cheese grated I'm just gonna gratethis all into one container because it's
all going into the same place so I'mjust gonna use a small grater and just
kind of go to town with it so now thatthese are boiling we're just gonna turn
them down to a lower heat to keep themin a simmer and let them simmer for
about 15 minuteswe're gonna keep grate the cheese look
at that beautiful beautiful okay so ifwe got our cheese grated this is gonna
be amazingwe're just gonna wait for these potatoes
to be done and we're gonna get movingokay so it's been about 15 minutes but
these potatoes are perfect fork tenderstick them right in get on ready to go
so I'm gonna drain these potatoesthen we're gonna let these guys cool for
about five minutes actually the perfecttenderness mm-hmm okay so these guys
have cooled down for a few minutes fromuse our potato ricer we have the fine
rice or insert in here and I'm just heuse this fork to kind of fill up the
potato ricer so we don't want to use ablender or anything like a potato masher
because we're not looking for mashedpotatoes we're looking for that really
smooth super silky texture that younormally get with these potatoes aligot
so at this point we're going to do isthis is where your arm power now my arms
already getting tired we're gonna startworking the cream the butter and the
cheese into the potatoes so I'm gonnaturn this back on and go to a very low
heat and I'm gonna add the cream firstand then just start getting this texture
worked in and we're just really going tobe working these potatoes for a while
should end up to be a very silky smoothtexture I'm gonna add the butter as well
and just kind of start working thatbutter in you'll see at one point the
potato is almost gonna start reactinglike a dough ball which is what it's
doing now and you're just gonna keepworking these potatoes ooh
silky smooth potato that's about thesilkiness of it so now let's just start
adding this cheese and we are going tobeat this cheese in we're gonna do a
little bit at a time in the beginningand then when we get to the ends the
grier and the mozzarella is going topull out of this thing and it's gonna be
beautifulI used that fine cheese grater it was a
planer which would make it melt into thepotatoes a whole lot easier
all this the pull is starting to happenwhoo sweating unbelievable Oh beautiful
okay this point we're just putting itall in ooh I think we got it oh yeah
that's it oh yeah this is it this is itlook at this we got it this is
this is what they're serving in therestaurants oh my gosh holy crap that's
unbelievablelook at this that is beautiful that is
beautiful oh my gosh this is potatoesaligot so we're gonna season this
guy now with a little bit of salt somekosher salt and then some black pepper
