Spinach Jalapeno Cheese Samosa (Fried/Air Fried)
Ingredients for Spinach Tortillas: Wheat flour – 1 cup Ajwain (Carom Seeds) – 1 teaspoon Oil – 2 teaspoons Spinach Puree – 4 teaspoons Water as needed Salt to taste Ingredients for Samosa filling: 2 cups Mexican blend cheese or Mix of Pepper Jack, Cheddar & Mozzarella cheese ¼ cup finely chopped pickled Jalapeno ¼ cup finely chopped fresh Jalapeno ¼ cup finely chopped Parsley & Cilantro 1 cup mashed potato ¼ cup finely chopped onions Salt to taste ½ teaspoon mixed herbs ½ teaspoon black pepper powder Chili flakes to taste ½ teaspoon Jeera powder (cumin) Tips / Variations Eliminate Spinach to make plain Tortillas. Add water as needed to make a soft dough Tortillas can be used for Burritos, Samosas, Chimichangas, Mexican Bhel, Mexican Pizza You can make variations in the filling according to your taste and preferences. Method/Instructions 1. Wheat flour – 1 cup 2. Ajwain (Carom Seeds) – 1 teaspoon 3. Mix well 4. Oil – 2 teaspoons 5. Mix well 6. Spinach puree – 4 teaspoons 7. Knead well 8. Shouldn’t be too soft or hard 9. Add water if needed 10. Add ¼ teaspoon oil to smooth it out 11. Let it rest for 20 minutes 12. Roll into your desired size. 13. On medium heat – cook until light brown spots appear 14. Wrap in cotton cloth after done to keep them soft 15. Mix well -1 cup mashed potato.,¼ cup finely chopped pickled Jalapeno, ¼ cup finely chopped fresh Jalapeno or to taste, ¼ cup finely chopped Parsley & Cilantro, ¼ cup finely chopped onions, ½ teaspoon mixed herbs, Chili flakes to taste, Salt to taste, ½ teaspoon black pepper powder, ½ teaspoon Jeera powder (cumin), Mash the mixture well. Add 2 cups Mexican blend cheese or Mix of Pepper Jack, Cheddar & Mozzarella cheese How to prepare: 1. Cut the tortillas into two halves, and fold them like a V, with the front flaps overlapping 2. Fill the V-shaped tortillas with the filling and seal the edges with a slurry of all-purpose flour. 3. Deep-fry them until they turn a light brown color.
